Evergreen Tapioca Flour, otherwise known as tapioca starch, is a gluten free and wheat free white flour. It is often used as an alternative to traditional wheat flours, particularly for binding other gluten free flours, adding texture to baked goods and as a thickener in soups, gravy’s and sauces. Tapioca flour has a very light, slightly sweet flavour. It is also an extremely smooth flour, with no heavy taste or smell which is what makes it an ideal thickener. Tapioca can also be used to help add crispness to crusts and chew to baked goods. Use in combination with other gluten free flours for best results.
